This cake was designed for a graduation party at a charter school in the Bronx, for children who were moving on from elementary to middle school. Such a big transition deserves a big celebration.
The basic construction is two southern chocolate buttermilk cakes with vanilla bean buttercream, then covered in vanilla fondant in the shape of text books.
The toppers (of course) were my favorite parts of the cake: a rice crispy treat owl covered in fondant elaborations, and a rice crispy treat apple with a very happy and celebratory bookworm. Look at him! His joy is totally contagious!
Happy Graduation Day to all of the wonderful kids at Astor Center for Middle Childhood! You've all worked so hard to get to this point and deserve to enjoy your special day. Congratulations guys. <3 All my heart.
